Upon completion of this course, it is the goal that all participants will be able to:
1. Understand basic concepts of producing quality school meals
2. Evaluate prepared food quality using the National Food Service Management Institute (NFSMI) Quality Scorecards
3. Enhance the visual appeal of school meal offerings
4. Collect and assess student opinions of meal quality and appeal
